Pretty, Delicious and In Memory...

I've been away for a few days, so I'm catching up tonight.  Just warning... LOL

RECIPE OF THE WEEK

 

My husband picked squash and peppers from the veggie garden this week.  So my recipe is using some of the veggies.    

Squash Casserole
4 cups sliced squash
1/2 cup chopped onion
1/4 cup chopped green pepper
1 cylinder of crushed saltine crackers
1 cup shredded 4 cheese mix
2 eggs, beaten
3/4 cup milk
1/4 cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter

  1. Preheat oven to 400° F.
  2. Place squash, onion and peppers in a large skillet over medium heat.  Pour in a small amount of water, cover and cook until the squash is tender, about 10 minutes.  Drain well and place in a large bowl.
  3. In a separate bowl, mix cracker crumbs and cheese.  Mix half of cracker/cheese mix with the squash.
  4. In a small bowl mix milk and eggs together.  Add to squash/cracker/cheese mix.  Stir in melted butter and season with salt and pepper. 
  5. Spread into a 9x13 baking dish.  Sprinkle with remaining cracker/cheese mix and dollop with the 2 tablespoons of butter.
  6. Bake in preheated oven for 25 minutes, or until lightly browned.

David made a bench for the front, out of some recycled wood from my daughter's room.  Here's a pick, I took it before it was all cleaned up from saw dust and such, but I think it turned out nice.

MEMORIAL DAY













As the weekend rolls around and the grills are fired up, remember why you have the freedom to grill and have fellowship with family and friends.    Remember those who gave willingly and sacrificed their life for freedom.

I think I'm caught up now... I'm working on a small patriotic angel wall hanging for my cubicle and hope I get it done this weekend.   I hope to have pics of that and a lap quilt to show soon.
